Your ordinary comfort foods like macaroni and cheese, nasi lemak or even mashed potatoes are fine and dandy, but sometimes thinking about it too much will make you feel a little bored with the idea. Sometimes you feel like having something different, but still gives you the same level of comfort as your regular cravings.

Banana Pancakes
Makes 12 pancakes


1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed


Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.

Stir flour mixture into banana mixture; batter will be slightly lumpy.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.

Cook until pancakes are golden brown on both sides; serve hot.

3 large potatoes
1 can spaghetti sauce
2 cups mozzarella cheese
Pepperoni (or other ingredients!)


Microwave potatoes until tender, about 12-15 minutes. Slice the potatoes in half lengthwise, scoop a small well into the center of the potato, sprinkle lightly with salt, then scoop abit of spaghetti sauce on top of the potato. Sprinkle some cheese on top of the sauce. Place a few pepperoni on top of the cheese, then transfer to a cookie sheet. Bake in an oven preheated to 400 degrees for about 15 minutes, or until the cheese is melted and bubbly. Allow to cool slightly before serving.

Cheese that melts well – You can use classic American cheese or get fancy


Preheat oven to 350 F.
Cut cheese into thin slices and place between two cookies.
Place cookie sandwiches onto a cookie sheet lined with parchment paper.
Bake for five minutes or until cheese is melted.

Tip: This method works even better if the cookies are still hot from the oven. The cheese will melt very quickly and you may not even have to put the cookies in the oven.

4 tablespoons (1/2 stick) unsalted butter
4 medium yellow onions, thinly sliced (about 14 cups)
Kosher salt and freshly ground black pepper
2 bay leaves
2 to 3 sprigs fresh thyme
1 cup dry white wine
4 cups low-sodium beef broth

Mac ‘n’ Cheese Topping:
4 ounces elbow macaroni (1 cup)

Melt the butter in a large Dutch oven or pot over medium heat. Add half of the onions and season with 1/4 teaspoon salt and a few grinds of pepper. Top with the remaining onions and season with 1/4 teaspoon salt and a few more grinds of pepper. Add the bay leaves and thyme. Cook, stirring occasionally, until all of the liquid evaporates the onions are very soft and just begin to turn golden, 45 minutes to 1 hour.

Nonstick vegetable oil spray
2 1/4 pounds russet potatoes, cut lengthwise into 3×1/3×1/3′ batons
3 tablespoons vegetable oil, divided
Kosher salt and freshly ground black pepper
4 garlic cloves, minced
2 tablespoons chopped flat-leaf parsley


Preheat oven to 450°. Coat a large rimmed baking sheet with nonstick spray. Toss potatoes with 2 1/2 Tbsp. oil in a large bowl and season with salt and pepper. Arrange in a single layer on baking sheet.
Roast the potatoes, turning occasionally, until browned and tender, about 30 minutes. Increase heat to 500°.

Continue roasting until fries are deep brown in spots, about 5 more minutes.
Whisk remaining 1/2 Tbsp. oil, garlic, and parsley in a large bowl. Add hot fries, season with salt and pepper, and toss to coat.
